The dairy-free industry has seen significant growth, but products still struggle to match the taste and texture of traditional dairy. Cultivated Biosciences offers a solution with its yeast-derived cream, which imitates the creaminess of dairy without additives. The cream is made from a special type of yeast and has been validated in products like coffee creamers and ice cream. The yeast cream contains fats, proteins, and fibers, all from the yeast, featuring a microstructure of yeast lipid droplets which resemble milk fat ones. The production process involves yeast biomass fermentation, a method distinct from precision fermentation as it is non-GMO, cheaper and more easily scalable.
